Cinnamon Bun Energy Balls

There’s no such thing as too many recipes for energy balls – and perhaps no such thing as too many energy balls either 😉 When cinnamon buns are out of the question because hey, life doesn’t always fit a half day baking project and your blood sugar needs a boost NOW – these will be your best bet. Energy balls with all the good stuff in them (hooray for iron rich ingredients such as pumpkin seeds and dried apricots in there) but with a totally yummy, decadent feel – here you go.

Makes 16 balls
Total Time: 15 min

Ingredients

100 ml pumpkin seeds (60 g)
300 ml dried apricots (200 g)
200 ml rolled oats (60 g)
2 tbsp cinnamon, divided
1 tsp ground cardamom
2 tbsp canola oil
2 tbsp pearl sugar (optional)

Instructions

  1. Using a food processor, blend the pumpkin seeds into a fine meal. Remove and set aside.
  2. Add the dried apricots into the food processor and pulse until they’re in small pieces. Add back in the ground pumpkin seeds along with the rolled oats, 1 tbsp of cinnamon and the ground cardamom. Blend until everything is evenly mixed together.
  3. Add in the canola oil and blend some more until everything is well combined and sticks together. You may need to add in a little water here if the apricots were very dry and not soft to begin with.
  4. Scoop up one tablespoon at a time, and roll into a ball. Then roll each ball in the remaining cinnamon and top with pearl sugar. Store in the fridge for up to a week or the freezer for at least 2-3 months. They thaw quickly.
